Support for ElasticSearch v9

Is your enhancement related to a problem? Please describe.

Do you have an estimate of when ElasticPress will support ElasticSearch v9?

Are there any downfalls of me using v9? I currently get the error "Your Elasticsearch version 9.1.3 is above the maximum required Elasticsearch version 8.99. ElasticPress may or may not work properly."

Hi @jonathan-bird,

We don't have an estimate at this moment. However, our internal tests indicate that the ElasticPress plugin runs fine on ES9. Please let me know if you experience any issues.

I ended up switching back to v8 so the client didn't have to see the v9 error message constantly. But i did test it and it worked fine. Got the deprecated message to use the sync command but that was all
