Add dark mode

Dark Mode is the future!

This task requires:

1. Splitting out 'functional' CSS from 'light mode' CSS
2. Designing a stunning dark-mode
3. Creating a dropdown to switch between the two CSS

Bonus:

1. Using a cookie to store the users choice
2. Using the users system settings to automatically select the choice
