Add an example for how to extend cookie expiration for login

Currently the examples given will use the default cookie expiration for authentication. It'd be nice to have some examples for how to extend this to be longer than the default.

I'm testing out adding this before adding the authentication schemes in Program.cs. I'll let you know how it goes!

{
    options.Cookie.Expiration = TimeSpan.FromDays(7);
    options.SlidingExpiration = true; // renew the cookie if it is accessed before expiration

@toiyabe the above example didn't seem to work. Do you have any ideas for how to extend this so people aren't logging in constantly? Or perhaps a pointer on investigating why a session may expire for a user?

Attempting this now. Will report back. If this is the case I'll expose these as parameters on the class.
