Yes it is! Someone screwed licensing 🍿 - It could be as simple as docker-custom.yml

services:
# ...
  redis:
    image: docker.io/valkey/valkey
# ...

This replaces the redis instance with a valkey instance... We could also put it as a configuration so they don't run at the same time.... Above is the shortcut
