- following the changes made in mth5 testing, namely switch to miniconda
- tried adding a line i found in simpeg/pydiso#16
- avoid error with PchipInterpolator only working for real numbers

This PR adjusts the way interpolation is done. It changes from using xarray to just interpolating on the individual components for both real and imaginary. This is more stable and removes the error with pchip and other interpolators for complex numbers.
