Updating corn in 2i2c

Documenting progress here and where I'm stuck - to discuss with @battistowx tomorrow

• Today I updated the quarto version here in corn to try to trigger a build and bring the newest earthaccess to 2i2c (commit)
• This should trigger a GitHub Action to Docker, but the GitHub Action is not triggered (from https://github.com/NASA-Openscapes/corn > https://hub.docker.com/r/openscapes/python).

• I also sleuthed Luis' communication with 2i2c, because we need to send them a PR to update in 2i2c (we no longer to this manually in the admin > configurator console). Some Issues:
  • Feb 2023 Updating the Openscapes hub 2i2c-org/infrastructure#2150
  • Dec 2022 Update images in openscapes staging hub 2i2c-org/infrastructure#2011

The docker image building is working now, and the instructions to update the image in 2i2c are here: https://github.com/NASA-Openscapes/corn?tab=readme-ov-file#updating-the-image-in-the-jupyterhub.

but we do need to update the README for a few things:

• mention that workshop and main hub both need updating in 2i2c config files
• mention testing with "Build your own image" - much easier than doing it locally
• remove the "Adding a new kernel" section (that ability has been removed in Updating base environment #39)
