Latest error:

ERROR: Jupyter kernel 'julia-1.10' not found. Known kernels: python3. Run 'quarto check jupyter' with your python environment activated to check python version used.

Yeah, let's not go in this direction (calling R and Python from Julia, which you try to do here) while we were pretty far with calling everything from R.

Whatever works is my approach and cannot see any other avenues to pursue using the knitr engine.
