Update MongoDB max version in the changelogs

Our changelogs (Jul 29, 2020) indicate max version 4.0.19-1 whereas 4.0.27-1 is available in the datatype (DB-Admin).

However, we provide 4.0.3-1 by default and freeze the upgrade.

So I suggest to update the changelog, and maybe clarify our overall Mongo versions in the doc.

May I add, what about writing directly in our official documentation we support MongoDB up to 3.6.x and 4.0.x due to the license ?
That would save some questions to Support ;)
