Our doc should be updated for Meteor 3+

Meteor 1.x and 2.x are not supported anymore, we should update the doc for Meteor 3+.

• Meteor 1: EOL
• Meteor 2: Maintenance mode July 2025 / EOL December 2025
• Meteor 3: Active Support

Regarding Meteor 3, I tested with Meteor 3.0.4 and 3.3.1 and both require Node v18.16.0 or later (see screenshot below).

I couldn't deploy Meteor 3 with an npm version below 7 as the Babel dependency needs at least npm 7.
