Review existing documentation and pull together into easy to navigate docs.

• put detailed docs in ./docs folder
• provide links to docs from the root readme.md
• Add the following:
  • describe how the listener works from a high level
  • review / update running backend
• Describe the various jobs that are defined in scripts
  • how executed / scheduled
