Add support for

• GDEY0213F51 2.13" Quadruple Color eInk / ePaper Display with 122x250 Pixels, additional yellow and red display, SPI interface
• Waveshare: 2.13inch E-Paper (G) raw display, 250x122, Red/Yellow/Black/White SKU:24797

This is a 2.13" quad-color (red, black, yellow and white) display. It has 250x122 black, red and yellow ink pixels and a white-ish background. It uses the JD79661 chipset

I found an ESPHome example configuration here with an external component:
