Add new resource to v2 example package

It should cover:

• field.categoriesOrdered: true
• field.categories with labels
• Integer field with categories
• field.missingValues as array of strings
• fields.missingValues with labels

One option is to reuse interlacer_example("colors.csv")

• fieldMatch (maybe on deployments?)
