In this repository you're using everything locally so the controller is the host at the same time. It's also possible to create a mac/linux setup playbook that's executed from an ansible controller on a server, right?

Yes, and a number of people do that. By default I run this locally, but you can easily change the inventory to work with a remote mac. See: https://github.com/geerlingguy/mac-dev-playbook?tab=readme-ov-file#use-with-a-remote-mac

Thank you so much! I already have an ansible setup script but will rewrite it to execute it from a control node running in a container.
I always end up spending way too much time overthinking which file structure to use, but I guess at the end it doesnt really matter huh? 😸
