Dedupe graphql-tools versions with Mockttp & start using graphql-tag

Graphql-tag isn't super important, but it's free (since it's in Mockttp
anyway) and it gives us better editor integration, and hypothetically
dedupes graphql parsing (though that doesn't matter for us, AFAICT).
