Overrides not applied / vanishing after first interaction

I'm pretty new to neovim so this might be a something trivial to others.
I can not get icon overrides to stay active longer than the first interaction with nvim-tree like opening a folder or file.
My Setup:
MacOS with default terminal,
lazy, treesitter, nvim-lspconfig, hrsh7th/nvim-cmp /cmp-nvim-lsp /cmp-path /cmp-buffer, LuaSnip and nvim-tree with nvim-web-devicons
I want to use the default SF Mono Font and just override all relevant glyphs with SF Symbols.
I've setup Nvim-Tree first with glyphs for folders. They work just fine, no problems at all.
Then i wanted to apply icon overrides by file extension. So i setup a basic web-devicons config. After fixing the ordering they showed up in the NvimWebDeviconsHiTest overrides and everytime i start nvim until i interact with nvim-tree like opening a folder or file.
I've started with Packer as i've followed an older guide but ran into the same problem with lazy now.
The nvim-tree setup is just the default i found in the documentation so it's pretty long but i've also tested with an empty setup

My issue is with overrides on the nvim-web-devicons side.
nvim-tree works just fine and i've ruled out SF Symbols or the font.
My guess is something with my setup / config is recalling the default.
It would be nice to see a working setup with overrides and the lazy package manager as an example.

I would recommend you take as many variables away as possible. Use simple package manager, or none (clone repository, add it to rtp manually (:h rtp)) and come up with reproducible minimal configuration. If it will work properly then you will have to investigate further. If not then it is a bug and you should include that minimal configuration in new issue.

I've deleted the contents of ~/.local/share/nvim and /state/nvim, but forgot .config.
When i started nvim it obviously reinstalled everything. It had dim and different colors.
In that state it seems to keep my overrides.
But that only lasts until i close nvim. On the next start of nvim it loads the bright colors as seen in the original screenshots.
I've reduced my Plugins to only nvim-tree and nvim-web-devicons still with the lazy package manager. just need to figure out where i get these colors from.

I also use lazy and have this file working: $XDG_CONFIG_HOME/nvim/lua/plugins/nvim-web-devicons.lua

Making tests I noticed that the if you want to only change the color you have to also put the icons AND CHANGE THE NAME, otherwise the new color is not picked.

This has something to do with colorschemes being set during lazy plugin loading.
For some reason lazy seems to like habamax. Thats the dim colorscheme from earlier.
If i set the colorscheme with all the other vim.opt in lazy.lua or in the init.lua before require("config.lazy") to habamax then the override icons will stay, even if i change the colorscheme afterwards

odd thing is the folder color is not correct for default as can be seen in the original post screenshots
if i call :colorscheme default manually it gets fixed
