Local iOS Simulator Support in local running AMTH (no test containers)

AS AN AMTH Test Developer, I WANT to use an iOS Simulator on my local machine with my locally setup AMTH, SO THAT I can debug the tests in my local IDE.

Currently Bifold doesn't work on local iOS Simulator due to indy SDK. Have captured it in this PR too #150

This is fixed. The PR to enable iOS simulators works in Bifold and BC Wallet. Note you cannot use the camera. This is a known limitation in the iOS simulators.
