Error when creating migration after making a major change to globals and collections

I've recently made a very major change to one of the globals: It represents a Library page, which contains many documents. Beforehand documents were grouped directly into categories, which were grouped into sections, all managed via Array fields.
In this new system, the documents are separated out into their own collection, with a new organization system, as can be seen in the attached gist: https://gist.github.com/TheOnlyTails/bf30faca7a27cbaab68d4ba11b6ee512

I've put off using proper migrations so far, but with this I've decided to finally adopt them, but after creating a migration on the production server to represent the current production database, pulling it down to dev, and attempting to create a new migration, I get the following error:
