Include UIMA service in processors to allow UIMA pipelines

At the moment, we exhibit the basic NLP tools from Apache.

This was to mimic the pipeline of a UIMA evaluation without the burden of setting up UIMA.

Now that we're comfortable with Open NLP, let's add a processor that can execute UIMA pipelines.
