Streams: APAC equities + Market hours update

• Added detailed session schedules for APAC exchanges (e.g., KRX, TSE, SSE, etc.), including local times, UTC equivalents, and notes on lunch breaks and closing auctions.
• Introduced quick-reference tables for marketStatus values by schema and feed type, reducing integration errors.
• Minor formatting fix to the schema fields table for consistency.

Navigation update:

• Added an "APAC Equities" entry to the sidebar configuration to improve discoverability of the new documentation section.
