Pin galaxy collections & roles #73
Description
We're now using features from community.general which are only in more recent versions. This caused confusion on #71, which was resolved by upgrading the collection locally.
It turns out that we can in fact pin versions of things in the galaxy file, so we should do that to ensure consistency.
