Missing Documentation for Self-Signed Certificate Configuration

The gitlab-mcp project currently lacks documentation on how to configure and use self-signed certificates.

This makes it difficult for users operating in environments with custom Certificate Authorities (CAs) or self-signed certificates to properly set up and use the tool.

When you start up with docker sse, can't you achieve what you want by setting up a caddy container?

If you want to enable SSL for the MCP server, I think the easiest way is to use a proxy.

I don't think it's necessary to incorporate it as a module of the MCP server.

What kind of problems would arise with the above?

As I understand the issue, the problem is that #72 did not include changes to the software documentation to state that the CA certificate should be provided using the GITLAB_CA_CERT_PATH variable, as opposed to using the more common NODE_EXTRA_CA_CERTS.

@DamienBattistella: could you confirm that I have understood you correctly?
